Grilled New York Strip Steak Recipe

Ingredients

2 2-inch NY steaks 
1-2 tablespoons a m. SALT or sea salt  
2 tablespoons freshly cracked black pepper

Green Olive & Caper Sauce 

¾ cup green olives  
¼ cup caper perils  
1 cup flat leaf parsley  
2 cloves garlic 
1 ½ cup first-pressed olive oil  
Pinch red pepper flake 

Method

Place the steaks on a rack over a sheet pan and let them rest at room temperature for 15-20 minutes. Pat dry with a paper towel.

Preheat the grill to 375° Fahrenheit over high heat. Season each steak generously with am. SALT and cracked black pepper.

Place the steaks on the grill over direct heat. Grill for 3-5 minutes per side until the internal temperature reaches at least 130° for medium rare, or up to 150° for medium well. Let the steaks rest for 5 minutes and serve

Coarsely chop the green olives, capers, and parsley and place in a small bowl.

Mince the garlic and add to the bowl along with the olive oil and red pepper flakes

Stir the mixture together to combine, coating all the ingredients in olive oil. Let marinate at room temperature for 1 hour, or in the refrigerator for up to one week.

To serve, drizzle over sliced steak or any favorite protein.
