Ingredients

1 small leek
1 garlic clove
1 tablespoon extra-virgin olive oil
1 ½ tablespoons white wine vinegar
5 ounces Boursin cheese
½ cup sour cream
¾ teaspoon kosher salt
¼ cup minced chives, plus more for serving

Method

Slice the leek in half lengthwise and thoroughly rinse to wash out any silt. Thinly slice the leek into halfmoons, then mince or grate the garlic clove.

In a skillet over medium heat, add the olive oil. Once hot, add the leek and garlic clove and saute, stirring occasionally, until the leeks are deeply browned, soft, and slightly caramelized—about 7-8 minutes. Add the white wine vinegar and scrape any brown bits from the bottom of the pan. Remove from heat and allow to cool slightly.

In a bowl, combine the boursin, sour cream, salt, and chives. Add the cooled leeks and garlic, then mix thoroughly. Transfer to a small serving bowl and top with additional chives. Serve with crackers, chips, and veggies.
